March 4, 2014—Tuesday in Uganda

Our morning started off slow, with showers, breakfast, and bible studies all around the compound.  We were ready for day two of our Pastors Conference.  Some stayed behind for that, and others headed out into the villages.  Some to schools again, and the rest to the clinic and market place outreach.
Loved the way they carried their babies...funny how we Americans
spend lots of money on high tech carriers....all they use is a cloth!!!

Loved these little faces....so easily entertained!

Clinic outreach

Passing out materials, and teaching them how to use the children's bibles

Our pastors conference went very well, and we were able to pass out 1/2 of the materials we brought.  The rest are reserved for the Wakiso Pastors conference Thursday & Friday this week.  Pastors and Sunday School Leaders were so excited about the books we brought.  Part of our team explained the use of the Children’s Bible, and the hand held bible message units that were passed out.  On Wednesday Erick is holding a class for those that got books, so that they know how to use them.
The afternoon continued after an awesome lunch of rice, vegetables and beef.  The pastors loved the lunch.  The conference continued, and the rest of the team went on a village outreach.

After the conference and everyone returned there was a clean up crew and a few of us were in the kitchen learning how to make Chapati.  As I told Sarah we made Chapati for a fundraiser and they first batch turned out pretty sad---she started to laugh, and said "they were crying?"  Slang...gets you in trouble every time.  She told us that they only make "Happy Chapati's there!  We then learned to make the mixing of Rolex, which was egg, vegetables, and rolled into the chapati. Dinner was also accompanied by fresh pineapple….never had we had such sweet fruit!
We made Chapati!!

The insides of Rolex, fresh shredded cabbage, onion pepper and egg
Completed Rolex--baked and ready to be dipped in fresh guacamole!
If you know the right people you can sometimes score ice!
After dinner...several went to play volley ball.
Hey, they grow the anthills big here in Africa!!
We rounded the evening out by visiting, and an awesome
worship time under the African stars.

Happy Chapatis Recipe
2 med onions, grated
½ bulb garlic grated
Salt to taste
2 cups water
2 KG Flour (16 cups of flour)
Mix together onion, garlic and salt, add flour then water, and mix until dough is hard. Add 4 TBS oil and mix until oil disappear. Roll into balls and then roll out onto floured surface.
Once rolled cook in pan without oil until transparent, then flip and cook the other side. Oil the cooked side and flip again. (cook once without oil, and once with oil—generous)
